In 2013 the opportunity arose to create a new line of restaurants. Our goal was to offer an exceptional product with great service - the broad lines of our business philosophy - for those clients who have less time or wish to use the take away. Consequently, we developed new techniques and adapted our products without relaxing the rules which have been the guidelines of our company.
We started by choosing an evocative name that has always appealed to us, Kirei, which means “beautiful, pretty or marvellous” in Japanese, while meeting our briefing for the names used in the company: a Japanese word that starts by K and is easy to pronounce in Spanish.
In this venture, Ricardo Sanz has included various classics from the Group's cuisine, focusing on sushis and sashimis - we cannot deny they are our hallmarks - but adding a wide array of soups, pasta and Japanese grills.
Then we organised our offer for airports and street outlets so that with less service, menus and personnel, clients can be offered the quality they are used to in the Kabuki Group restaurants: either choosing dishes or menus from those on offer to eat on the premises or choosing a Bento menu to takeaway.
The first Kirei opened in terminal T4 of the Adolfo Suárez Madrid-Barajas airport and two years later, in 2015, the second was inaugurated in T1. However, shortly, there will be new openings throughout Spain to reinforce this concept of fine Japanese gastronomy in a more informal environment.
